Barbecue bacon-wrapped walleye

The combination of walleye chunks, bacon, and barbecue sauce is a win­ner. You might have had this recipe with water chestnuts or scallops before, but try it with walleye for an even tastier combination. Ingredients 5 lbs walleye fillets, cut into 1-inch cubes 1 lb bacon strips, cut in half Barbecue sauce 1 cup Jack Daniel’s or apple juice 1 cup ketchup ½ cup dark brown sugar ¼ cup vinegar 2 tsp Worcestershire sauce 3 cloves garlic, minced ½ teaspoon dry mustard salt and pepper to taste Directions 1. Combine sauce ingredients in a saucepan and mix well. Simmer for 20 minutes, then allow to cool. Store in an airtight container in the refrigerator. If you make it a few days in advance, the flavours will have more time to blend together. If you don’t want to make your own barbecue sauce, try your favourite store-bought sauce with this recipe. 2. Wrap bacon strips around walleye cubes. 3. Thread onto shish kebab skew­ers so bacon doesn’t unravel. Repeat until skewers are snug and full. 4. Cook on shish kebab rack on medium heat in barbecue; turn continually. 5. When bacon begins to crisp, pour barbe­cue sauce on wraps. 6. Continue turn­ing periodically until fish is white and bacon is crisp.
