Maple and garlic glazed perch

This maple versatile glaze isn’t just for fish—it also adds a rich, flavourful touch to your favourite game bird.

This simple maple glaze with an Asian twist works just as well with fish as it does with your favourite game bird. Serve on a bed of jasmine rice. Ingredients (Serves 2) 1 tbsp butter 4 fillets of boneless, skinless yellow perch 1 tsp salt ½ tsp ground black pepper 2 green onions, sliced Glaze 2 cloves garlic, minced 1 tsp Dijon mustard ¼ cup maple syrup 1 tbsp hoisin sauce 1 tbsp soy sauce ½ tsp sriracha hot sauce (more if you like it spicy!) Directions 1. Whisk together all glaze ingredients into a bowl and set aside. 2. Preheat oven to 400˚F 3. Season perch fillets with salt and pepper. 4. Heat a non-stick pan over medium-high heat and melt butter. 5. Sear fish for 1 minute on each side. 6. Generously glaze top of fillets, and place in oven for 3-5 minutes. 7. Remove from oven and serve with jasmine rice or some green vegetables of your choice. Garnish with green onion and an extra drizzle of glaze.
