These from-scratch wontons are perfect in this light soup or boiled on their own and served with a spicy dipping sauce of your choice. Ingredients (Makes 4 servings) Wontons 20 wonton wrappers 4 oz ground pork 4 oz ground moose meat ¼ cup green onions, chopped 2 tsp fresh ginger, grated 1 tbsp soy sauce ½ tbsp sesame oil 1 tsp salt Soup 4 cups chicken broth 2 tsp fresh ginger, grated 1 tsp garlic, minced ½ cup cremini mushrooms, sliced thin 2 bok choy (sliced) 2 tbsp green onions, chopped 1 tbsp soy sauce 1 tbsp sesame oil Directions 1. Combine all wonton filling ingredients in a bowl. 2. Lay out wonton wrappers and spoon 1 tsp of filling onto each one. Rub some water around the edges and fold the corner until they meet together on the top and squeeze to seal. Make sure no air is trapped inside as this can cause them to burst when cooking. 3. Place finished wontons into a sealed container so they don’t dry out. 4. For the soup, bring the chicken stock ginger, garlic, and mushrooms to a simmer. Cook for 5 minutes. 5. Add bok choy and wontons. Cook for a few more minutes, then transfer into bowls 6. Garnish with chopped green onions, soy sauce, and sesame oil.
